Perfect for sipping while watching the sun drop over the Pacific, Montage Laguna Beach captures the ocean spray in its Huckleberry Fizz:

1.5 oz. Tanqueray Ten Gin

1 tsp. powdered sugar

1 oz. fresh lemon juice

Drizzle of huckleberry syrup

At Ojai Valley Inn & Spa, it's not just about what's on the menu, it's about what's not on the menu. At the end of the day when the sun has set in Ojai and the "pink moment" has marveled you, step into the bar at Maravilla and meet barman Brian Monsour. He's sure to strike up a conversation with you and within no time, create a martini simply made for you. By the second or third night of your stay, the drink may even have its own name- yours! Shaken or stirred, on the rocks or up - your wish is his cocktail command!

2 oz. El Cielo Blanco Tequila

1 oz. Cointreau

2 oz. House Made Sweet and Sour

1 oz. Fresh Blood Orange Juice

Served on the rocks with a sugar and salt rim.

At Campton Place Bar, the clubby sanctuary at San Francisco's 110-room boutique Campton Place, A Taj Hotel, the Taj Palace Cocktails pay tribute to the property's sister hotels in India - four authentically restored palaces, one still home to royalty - capturing the allure of a bygone era in a glass. One favorite, the Jodhpur "Blue" Martini, is named for the Umaid Bhawan Palace in the "blue city" of Jodhpur, India:

1.5 oz. Bombay Sapphire

1.5 oz.Stolichnaya

2 drops Blue Curacao

1 drop Martini Bianco

Garnish - thin orange peel

Pour all ingredients into a brandy snifter, add 4 ice cubes and swirl tableside. Place a swizzle stick across a martini glass and pour the drink into the glass over the swizzle stick.
